Peanut Butter Banana Muffins with Brown Sugar Swirl

There’s no better simple pairing than banana and peanut butter.

Well, perhaps peanut butter with chocolate or chocolate with a sprinkle of sea salt. Still, banana and peanut butter feels light enough that I can fit into my pants the next day.

 

When my dad was younger, he and my grandfather used to eat peanut butter and pickle sandwiches.

Yeah… that’s a bit extreme for me.

The furthest I go is chocolate and bacon.

I can’t wait until Lent is over.

 

These muffins turned out super moist and dense, much like banana bread, with the peanut butter chips softened and slightly melty.

Each bite revealed a generous pocket of peanut butter. Truly satisfying.

 

These were basically my dream muffins.

I almost added a smear of peanut butter while they were warm, but the banana-to-peanut-butter ratio felt perfect.

 

Instead, I spread a little organic butter on a warm muffin and let it melt. Best choice of the weekend.

Peanut Butter Banana Bread Muffins

adapted from allrecipes

makes 12–15 muffins

Ingredients:
1 cup sugar
1 egg
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsweetened applesauce
3 ripe bananas, mashed
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup peanut butter morsels

Directions:
Preheat the oven to 350°F (175°C) and arrange muffin cups in a tin. In a bowl, beat the sugar, applesauce, and egg until pale and creamy. Mix in the mashed bananas and vanilla. Add the flour, baking soda, and salt, stirring until the batter is smooth. Fold in the peanut butter morsels. Spoon the batter into the muffin cups.

Bake 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly before serving.

Mr. How Sweet doesn’t care for banana bread — I still don’t know what planet he’s from.

Sometimes I joke that I could send him back there; maybe his fellow aliens all have mustaches, too.

Speaking of mustaches, he came home on Friday hoping to win me over with Godiva truffles.

The truffles were delicious, but they didn’t provide the beer-goggle effect required for me to smooch him while he’s sporting a mustache.

I might share a photo of the “crustache” soon — I never expected it to last more than a week. I thought he’d shave before he starved.

He’s stubborn, though, and usually I get my way.
