I do. I’m doing it right now.

I like to share a pork-forward recipe between Christmas and New Year’s for anyone who includes pork in their holiday traditions for luck. Over the years I’ve posted enchiladas, pulled pork grilled cheese, slow cooker sweet-and-spicy pork shoulder and pulled pork tostadas — and that’s only the beginning.
But we’ve never put pork inside the guacamole before.

Why not? I always pile guacamole onto my carnitas tacos, so this felt like the next logical step.
Also, you know how I feel about over-the-top guacamole — caramelized pineapple, bacon, goat cheese — I love it. Big, messy, loaded guac is my thing.

One reason I’m obsessed: the pork adds texture and crunch before the chip even hits your mouth.
The flavor is intense — layered and full. It’s the kind of combination that surprises you the first time and then becomes an instant favorite.

It’s festive, too — perfect for holiday gatherings or any time you want a special appetizer.

Bonus: it’s accidentally low-carb, so it’s an easy choice if that’s part of your New Year’s plan.

Ingredients
- 1 cup pulled pork
- 4 ripe avocados
- 1 jalapeño pepper seeded and diced
- 1/3 cup crumbled queso fresco cheese plus extra for topping
- 1/4 cup chopped fresh cilantro
- 3 tablespoons diced sweet onion
- 1 lime juiced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 jalapeño pepper sliced, for topping if desired

You can make the pork ahead or use leftover pulled pork — I recommend leftovers for convenience. To crisp it, spread the shredded pork in a large baking dish and roast at 425°F for 20–30 minutes, tossing with a fork every 10 minutes. This step isn’t required, but it gives the pork that authentic carnitas texture.

In a bowl, combine the avocados, queso fresco, cilantro, onion, lime juice, salt and pepper. Mash and stir until combined, keeping the texture as smooth or chunky as you prefer. Taste and adjust seasoning with more salt, pepper or lime juice. Top the guacamole with the crisped pork, extra cheese, cilantro and sliced jalapeños if you like.
