This is about as spooky as I’m going to get for Halloween.

Drippy salted caramel rims!
Cider mimosas made with pomegranate juice, apple cider and champagne — yes, all three. I’m totally in love with this combo. It’s bright, festive and perfect for autumn gatherings.

Over the past few years I’ve shared a lot of drink recipes — one each week — but this one feels special. As I’m getting close to giving birth I had to taste-test it myself. I couldn’t resist: LOOK AT THIS!
Isn’t it little pieces of heaven in a glass? I love it.

The idea is simple. I couldn’t choose between apple cider mimosas or pomegranate mimosas, so I combined both and topped each with champagne. A salted caramel rim adds a playful autumn twist. If you’re hosting a pumpkin carving night, Halloween brunch, Friendsgiving or holiday gathering, these mimosas should be on the menu.
And naturally, they’ll work just as well for Thanksgiving and throughout December.

I’ve always been a huge apple cider fan, so this is an obvious match for me. At first I planned caramel apple mimosas — I’d seen variations calling for caramel-flavored vodka — but I didn’t want to mix vodka and champagne in a small glass. A caramel rim alone wouldn’t satisfy my caramel craving, so I adapted the drink instead.
Changing plans turned out to be a win. This mimosa tastes like fall in a glass and works for breakfast, brunch, an afternoon cocktail or a festive nightcap. With the holidays approaching, it’s easy to imagine serving this often.

Yes — pretty much perfect for the season.



Pomegranate Cider Mimosas with a Salted Caramel Rim

Ingredients
- salted caramel sauce for the rim
- 1 750mL bottle chilled champagne
- 1/3 cup pomegranate juice
- 1/3 cup apple cider
Instructions

Rim each champagne flute with a small teaspoon of salted caramel.

Add about an ounce of pomegranate juice to the bottom of each flute, then about an ounce of apple cider. Top with chilled champagne and serve.
